YAKHNI PULAO

YAKHNI PULAO


Ingredients


◆  For Yakhni

● Mutton - 500gm

● Onions - 115gm

● Cinnamon - a small pieces

● Cloves - 6

● Garlic - a few flakes 

● Ginger - a small piece

● Green chillies - 5gm


For Pulao

● Pulao rice - 500gm

● Onions - 115gm

● Cumin - a pinch 

● Bay leaf - 2

● Cloves - 2

● Cardamom - 2

● Cinnamon - 2

● Curds - 115gm

● Salt - to taste

● Fat - 50gm


Garnish

● Hard-boiled eggs - 2


Method

Yakhni

1. Wash and cut up meat.

2. Place all yakhni ingredients in a pan, cover with stock or water and simmer till meat is tender.

3. Let it cook and remove fat from surface.


Pulao

1. Wash and soak rice.

2. Peel and slice onions.

3. Heat fat, fry sliced onions and remove. 4. Add whole spices and fry for a few minutes.

5. Add meat from stock (yakhni) and curds. Cook for 15-20 minutes.

6. Add rice and fry.

7. Add stock and salt and cook till rice is done.

8. Remove excess moisture by putting live coal on the lid or drying in an oven.

9. Serve hot, garnished with fried onions and hard-boiled eggs.
