Nargisi kofta is a dish from the Mughlai cuisine. ... It appears that the Moghul emperors took kofta from Persia to India, serving the variation Nargisi kofta. Nargisi kofta consist of ground meat mixture wrapped around a hard boiled egg and cooked in rich spicy saucy gravy.
◆ Ingredients
● Meat (finely minced) - 500gm
● Eggs (hard-boiled) - 4
● Egg for binding - 1
● Cardamoms - 2
● Cloves - 2
● Cinnamon - 1 piece
● Onions - 50gm
● Green chillies - 1
● Salt - to taste
● Fat to fry
● Flour to coat boiled eggs
◆ Curry
● Tomatoes - 500gm
● Turmeric - 1/2Tsp
● Chilli powder - 1Tsp
● Green chillies - 1
● Garam masala - 1/2Tsp
● Onions - 110gm
● Garlic - 2 flakes
● Oil - 30gm
● Salt to taste
◆ Garnish
● Coriander leaves - few springs
◆ Method
1. Mince meat finely. Add beaten egg.
2. Add finely chopped green chillies, onion, powdered cardamom, cloves and cinnamon and salt.
3. Dip eggs in seasoned flour. Coat with minced meat mixture. Deep fry.
4. Meanwhile heat fat for curry. Add sliced onions and sauté. Add finely chopped garlic, turmeric and red chilli powder.
5. Add puréed tomatoes and salt and let it simmer. Add garam masala.
6. Drop the koftas one by one into the gravy. Simmer for about 30 minutes.
7. Cut the koftas into two halves and let each piece float in the gravy with yolk side up.
8. Garnish with coriander leaves.
